Non-Vintage Mountain Sparkling
Tasting Notes
Extended aging on the lees builds a rich, expressive nose of brioche, green apple, and subtle spice. The palate follows with layered texture and depth, framed by bright, refreshing acidity.
Vineyard Notes
Perched at elevation in the Sierra Foothills, this vineyard is rooted in rocky, well-draining volcanic soils that naturally limit vigor and concentrate flavor. Warm, sun-filled days are balanced by cool mountain nights, allowing for slow, even ripening and the preservation of vibrant acidity. This unique site supports both Chardonnay and Cabernet Franc, each expressing the vineyard in its own way, Chardonnay with brightness and finesse, Cabernet Franc with depth and structure, resulting in wines with clarity, balance, and a distinct sense of place.
Winemaker Notes
75% Cabernet Franc, 25% Chardonnay. An uncommon blend that balances richness with freshness, offering layered notes of green apple, brioche, and toast. Crafted from both barrel- and stainless-fermented cuvées and aged en tirage for 18 months. A restrained dosage of 2 g/L preserves a crisp, focused finish.
