2020 Cabernet Sauvignon
Lava Cap’s Cabernet Sauvignon has long been recognized for producing age-worthy wines that showcase vibrant fruit and rich texture. The 2020 Cabernet Sauvignon holds true to this, showing vanilla, cassis, and blackberry on the nose. On the palate, vibrant fruit mingles with allspice and clove, framed by vibrant acidity and well integrated tannins.
The grapes for this wine are predominately sourced from the oldest vines on our Estate property, planted on a gentle North East facing slope on loose decomposed volcanic rocks at 2,700ft nearly 40 years ago. These old head trained vines are rarely irrigated, and are the last grapes we harvest every year. The remainder of the grapes are grown across the American River, on granite soil at a similar elevation, around 2400 ft, on granitic soil.
After primary and malolactic fermentation in stainless steel, the wine was racked to new and used 100% French oak barrels. After 16 months of aging, the wine was blended and bottled.
